What IS Taco Tuesday? It’s a custom in many US cities of going out to eat tacos or in some cases select Mexican dishes typically served in a tortilla on Tuesday nights.  Is this something that has caught on and become a thing in the country where you live? Or is this just an American thing? Either way, nothing beats meat and cheese on a warm tortilla no matter what day of the week it is.

There is even something called WALKiNG TACOS. Seriously. You put your ingredients into a chip bag and grab a disposable utensil. I think they would be great for football season, UFC nights, any night, really, when you’ve guests over but don’t want to be tied to a table.

I like to make my own taco seasoning, found here – I leave out the salt because some of us are having to watch our blood pressure around here. (I still put salt on potatoes, though, shhhhhh, don’t tell anyone!)

While tortillas are my favorite-est ever, I’m not a fan of Mexican food. The only thing I’ll eat at our local Mexican restaurant when the man gets a hankering is their beef chimichunga…. literally shredded beef wrapped in a tortilla, that’s it. All the toppings come “on the side” and get pushed to the man’s plate LOL! When I make tacos at home I use ground turkey (seasoned with the seasoning above), lettuce, tomato, black olives, and shredded cheese. Lately, I’ve been finding really nice packages of steak strips. I’ll throw those in a pan with Tony Chachere’s Creole Seasoning, saute some peppers and onions up for the man, and throw it all on tortillas with some cheese.

My absolute favorite, though, is spicy chicken bacon ranch. I heat up some Tyson Grilled & Ready chicken strips & cook some bacon, swirl some ranch on the tortilla, slap 2 slices of pepperjack cheese down on the ranch, then pile the chicken and bacon on top of that and roll it up. From there it goes onto a flat pan on the stove (or a George Foreman grill) and gets toasted on both sides. SO YUMMY. Not exactly Mexican but it does have a little bit of heat from the cheese… which gets even heat-ier overnight!
