Wacky Wednesday
It is International Waffle Day today, and with everyone stuck at home, it’s the perfect day to make waffles! You can eat them for breakfast, lunch, or dinner – trust me! It’s not weird to have them at two in the afternoon. Nope. And there are all kinds of toppings you can put on them!
While I prefer to go to iHop to making them ourselves, that’s not really an option with all the dine-in restaurants closed at the moment. We have a Waffle House within walking distance, too. However, my husband can make a mean Belgian waffle any day of the week, any time of the day, with the Belgian waffle maker I gave him for Christmas this past year 😉 I don’t know what he does with the Belgian waffle mix that comes in a box from our local grocery – he won’t tell me. “Dad’s secret Belgian Waffle Recipe” he calls it. So here’s a couple of MY go to recipes that I’ve used in the past to make waffles (when I’m not a lazy butt and buy Eggos. LOL!)

Need some new topping ideas? Try some of these:
Drizzles: Maple syrup, honey, hot fudge sauce, caramel sauce and fruit syrups like strawberry, blueberry, blackberry and more.
Spreads: Whipped butter, peanut butter, Nutella, cream cheese, marshmallow fluff, whipped cream and yogurt.
Sprinkles: Powdered sugar, granola, rainbow sprinkles, bacon crumbles and chopped nuts like macadamias, pecans, walnuts and pistachios.
Fruit: Sliced strawberries, blueberries, raspberries, sliced bananas, sliced peaches, sliced kiwi and diced apples.
My 17-year-old loves Nutella. My 20-year-old fills every.single.hole. with syrup – very carefully and very methodically. He’s not OCD at all *eye roll*. My husband goes with good old-fashioned syrup. My favorite is butter and strawberry jam…
Ok, hubs needs to get on that Belgian Waffle maker pronto. I’m drooling just a little bit!
