Wacky Wednesday
Today’s word-of-the-day is BLUEBERRIES! That’s right, it’s national Blueberry Day, and who doesn’t like blueberries? There aren’t many blue foods that are naturally occurring. They are low in calories, high in nutrients, loaded with antioxidants and have so many great health benefits!
Last month, I started buying blueberries by the bag from the freezer section in the store to make smoothies for breakfast. We have a big blender that my husband uses to make all his work-week smoothies at once, but I like my Magic Bullet for single-serve smoothies 😉 I just throw in about a 1/2 cup of frozen blueberries, 1 or 2 strawberries, 1/4-1/2 cup of plain greek yogurt and blend. Sometimes I’ll forego the yogurt and add fruit juice instead, which makes it a little tarter depending on the fruit juice you use. I also like to sub the greek yogurt with frozen yogurt for an after dinner treat!
Then you have your homemade blueberry muffins! This is one of my favorite recipes:

And because we’ve entered into the summer months down here in the Southern US, I’m dying to try these blueberry popsicles!
