Wacky Wednesday
Today, we’re going to talk about one of my favorites… POTATOES. Why? Because it’s National Potato Day, that’s why. They’re cheap, there are many different varieties, and so many different ways you can cook them! So here’s a few of my tried and true potato recipes that the family and I just love!
These Ultra Crispy Smashed Potatoes have been dubbed “crack potatoes” in our house, they are that good, and this recipe works with all potato types (allegedly – I’ve only used baby reds so far)
Quick Baked Potatoes is another one of my go-to recipes because they don’t take near as long as, well, not-quick baked potatoes! Quick note – I made these without parchment paper (just threw them on a cookie sheet with olive oil) and with aluminum foil instead of parchment paper… they stick. Get parchment paper, lol.
The best part is, if you have any leftover halves, you can scrape out the potato and make potato skins with them (yes I have done that! so yummy!).
These homemade french fries are fantastic – they’re double fried and have a great crunch without being TOO crispy. They’re a little time consuming (for me, anyway) but totally worth it in the end!

All of these potato recipes are in my recipe arsenal, and it doesn’t take but one or two times making them before you don’t even need the recipe in front of you anymore – that’s my favorite kind of recipe: EASY! Don’t get me wrong – I love me a big ole baked potato, but sometimes a person just wants something different 😉
